Delivery Information


We deliver using our fleet of refrigerated vehicles which deliver fresh produce daily to the whole realm of the catering trade. At all times temperatures are maintained at the correct level to ensure products of the best quality are delivered. Deliveries are made Monday to Saturday.

Our first commitment is to freshness. When fish arrives on our premises, it is normally bought to order, native fish have spent less than 24 hours on dry land; similarly continental fish has been sourced direct from all over the world and reach us within 36 hours. Overnight deliveries arrive by daybreak and cleaning, filleting, packing and dispatch are completed in under 6 hours. Seasonality of supplies is lengthened by freezing a small proportion of prime stock on site.


The second commitment is to quality. Our network of suppliers has been carefully selected for their high standards and integrity. To be on our approved supplier list means you have to consistently source fish to the high standards laid down by ADM

 

To ensure the quality is of the highest standard, ADM sources fish from the UK and around the world, Turbot from Norway, Halibut and Lobster from Canada, Tuna and Swordfish from Indonesia, Seabass and Seabream from Greece, France  and Turkey.

 

 

Lastly you have the assurance of dealing with a team of experts who take pride in all aspects of this family run business, which means you and your needs come first. You can buy to order or select from stock, all products carry traceability Deliveries can be arranged to match your needs. You do not have to carry large stocks and you can change your range of merchandise frequently to match the best in season.

Whether you have a fixed cover operation or are involved in banqueting, with ever changing numbers, we can supply to order. We can deliver using just-in-time systems or with a regular scheduled drop, depending on your requirements. Freshness is paramount: within 6 hours of taking delivery from the fleet of trucks arriving overnight from  ports, we clean, fillet, pack and dispatch to you.

 

Should you want either fresh or frozen fish  we are resourced to fulfil your orders. We carry stocks of fish and  frozen at the peak of freshness so you can extend your seasonal menus. Whether you want ovenready, or even portion-controlled foods or you prefer to buy unfilleted fish  we can deliver to order.

Fresh Wet Fish


We stock over 20 basic varieties of fresh fish, including the most popular varieties such as Cod, Haddock, Plaice, Sole, Bass, Salmon , Skate but just to name a few , all prepared just how you like it , and of course we can get any special requirements with only a days notice. One of the things we try to promote is the conservation of our native fish stocks, so we don't sell "baby size" fish ,and also we are now stocking the lesser known but equally versatile varieties , such as Pollock, Rock, Coley,  and various lesser types of Soles, as a change to the more traditional Cod, give them a try, you will be pleasantly surprised by their fine qualities and excellent flavours. 


Fresh mackerel are available all year round and are full of Omega 3 oils, which are very good for people with heart problems,  are excellent when hot smoked, Salmon and trout are equally as good for a healthy diet as they too are full of nutrient rich fish oils.White Fish is the foundation of our quality wet fish section , fresh haddock , plaice, sole, halibut and of course cod fillet with lots of other choices available will entice you to try an exciting new menu, all of our white fish can be prepare to your requirements , try having your fish filleted, steaked, or trimmed whole.

Hot and Cold Smoked Fish


Fish can come smoked in either of two ways , hot smoked is ready to eat, cooked over a hot smoked, you can the eat it cold or re-heat it gently, or cold smoked, this is preserved fish smoked over a cool smoke away from the direct heat of the smoke fire. If you are unsure we can always advise you of the most suitable methods to use, we can even give you a simple recipe idea too.

 


Kippers are cold smoked ,so can be grilled lightly for 6-8 mins, or dry fried and served with crusty brown bread and butter,
Arbroath Smokies are small whole haddocks, hot smoked over  "old peat ", which gives them a unique flavour, eaten cold they are wonderful with a salad, or grilled gently and eaten with new potatoes are just great. Smoked mackerel fillets are hot smoked , and really are best eaten cold to experience their delicate flavour, we stock various flavours, like  peppered and plain, all naturally smoked with no dyes or preservative.

Smoked cod fillets are cold smoked ,. Golden smoked cutlets, are whole haddock or whiting, block filleted and cold smoked , they are lovely cooked as above , or used in a kejorie dish.Smoked haddocks , are the traditional smoked fish and come cold smoked in either natural or dyed types , the skin is left on so you can always tell its real haddock fillets, look for the "thumb mark" on its back.


Some people find yellow smoked fish a little too salty, so soaking in cold water for an hour prior to cooking will reduce the salty taste.

Shellfish

 

 

Brown crab is sold whole in the shell, we will clean it out and you can dress it as you like, also sold as ready dressed, and as potted pure crab meat and lastly one of our most popular lines , as crab claws for the delicate white claw meat. Mussels are a really popular seasonal line from September to march , sold ready to eat or live in shell,. Prawns, cockles, whelks, mussels, all come as ready cooked i.q.f., to maintain absolute quality and taste, we recommend you purchase then on the day of consumption for optimum quality to enhance your enjoyment. Jellied eels are one of England's traditional London dishes, slices of cooked eel jellied in a clear gelatin. Surimi shapes are one of our most popular lines with everyone, made from white cooked fish, and flavoured and shaped into lobster tails, king prawns and crab stix ,and delicately sprinkled with paprika , there a ready to eat treat for the whole family.

 


Dressed salmon makes a stunning centrepiece for your buffet. We use fresh salmon sourced in the Shetland Isles and other locations in Scotland. A whole salmon is gently poached with parsley and lemon and lightly seasoned. The skin is carefully removed from one side and the exposed flesh is decorated with thinly sliced cucumber dipped in aspic (alternative styles of decoration can be applied according to your taste). The salmon is presented on a disposable tray surrounded by crayfish and prawns. For smaller groups of guests, a salmon fillet can be dressed in the same way.
